Whiskey Chicken

Dear Cook,
This recipe I am about to share I found in a cookbook I got out of the library. I do not remember the title or its real name but I do remember how much everyone LOVED it! It is pretty simple and it has made me fall in love with the herb Cilantro.

Cooking Tip:
Cilantro looks alot like Parsley but it smells much different. Make sure you do not confuse the two and have to go back to the store to change it. Parsley just wont cut it for this recipe.

Here is the recipe:

Whiskey Chicken

Salt
Pepper
4 thin slices Chicken breast.
1/4 cup olive oil
2 table spoon butter
1/3 cup whiskey
1/4 cup chicken broth
1 cup whipping cream (Clan MGregor Whiskey)
1/4 cup cilantro


Salt and pepper both sides of the chicken.
On medium heat, melt the butter and oil in pan.
Brown chicken on both sides.
Drain liquid from pan.
Add Whiskey to pan. Simmer for a few mins.
Add Chicken broth and simmer again for few mins.
Add Whipping Cream and Cilantro and simmer until whipping cream has thickened slightly.

Raw Chicken

Ok so those of you who know me I like to cook for others and sometimes what I come up with works and sometimes it doesnt. lol Well tonight I didnt take the chicken out of the freezer soon enough and I thawed it as much as possible before sticking it in the oven. Apparently it was not thawed enough because two hours later it was def not cooked all the way through. We microwaved what we wanted and then I stuck it back in the oven. Well the moral of the lesson is that if you like to cook and decide to cook a whole chicken just make sure that it is completely thawed out before you decide to cook it. This will save you embarrassment and grief for the rest of your life from the family. hahaha FIgured I would share this experience with you while it was fresh in my mind.
