Whiskey Chicken

Dear Cook,
This recipe I am about to share I found in a cookbook I got out of the library. I do not remember the title or its real name but I do remember how much everyone LOVED it! It is pretty simple and it has made me fall in love with the herb Cilantro.

Cooking Tip:
Cilantro looks alot like Parsley but it smells much different. Make sure you do not confuse the two and have to go back to the store to change it. Parsley just wont cut it for this recipe.

Here is the recipe:

Whiskey Chicken

Salt
Pepper
4 thin slices Chicken breast.
1/4 cup olive oil
2 table spoon butter
1/3 cup whiskey
1/4 cup chicken broth
1 cup whipping cream (Clan MGregor Whiskey)
1/4 cup cilantro


Salt and pepper both sides of the chicken.
On medium heat, melt the butter and oil in pan.
Brown chicken on both sides.
Drain liquid from pan.
Add Whiskey to pan. Simmer for a few mins.
Add Chicken broth and simmer again for few mins.
Add Whipping Cream and Cilantro and simmer until whipping cream has thickened slightly.

Raw Chicken

Ok so those of you who know me I like to cook for others and sometimes what I come up with works and sometimes it doesnt. lol Well tonight I didnt take the chicken out of the freezer soon enough and I thawed it as much as possible before sticking it in the oven. Apparently it was not thawed enough because two hours later it was def not cooked all the way through. We microwaved what we wanted and then I stuck it back in the oven. Well the moral of the lesson is that if you like to cook and decide to cook a whole chicken just make sure that it is completely thawed out before you decide to cook it. This will save you embarrassment and grief for the rest of your life from the family. hahaha FIgured I would share this experience with you while it was fresh in my mind.

Christmas Sugar Cookies!

This recipe is great for the holiday season to make and then decorate with the kids!



Sugar Cookies

2/3 cup butter
3/4 cup sugar
1 egg
1 teaspoon vanilla
4 teaspoons milk
1/4 teaspoon salt
1 1/2 teaspoons baking powder
2 cups flour

Cream butter and sugar until fluffy. Blend in egg, vanilla, and milk. Combine dry ingredients and mix well. Divide dough in half and chill 1 hour. Roll dough 1/8 inch thick on lightly floured surface and cut with cookie cutters, or roll into tube and slice. Bake at 375 degrees for 6-8 minutes, or until edges begin to brown.

Some Gift Ideas:

1.) Oversized coffee mugs, antique china cups and saucers, and whimsical trays are easy to fill and give away. It's fun to add sample-sized packets of gourmet coffee or tea to them.

2.) Cellophane-wrap a batch of cookies and tuck it into a flower pot for an avid gardener. Tuck in a package of flower seeds, too.

3.) Grandma loves getting a basket filled with cookies!

4.) A single mother would love a jar mix to make with her kids.

5.) Teachers and secretaries are delighted to find a decorated bag of cookies on their desks - fold over the top, punch two holes, and thread raffia or curling ribbon through the holes to make it festive.

6.) The mail carrier would enjoy a decorated envelope brimming with them.

7.) The dog would love a good munchy too! Mold scrapes at the end of a batch into the shape of bone for Fido!
